Day 20 : The Happiness Challenge

I don’t want this challenge to end!
I have not only become more consistent with blogging, I have grown this special bond with all my readers and it seems like we are a family already. The way I look forward to everyone’s comment everyday and how I feel responsible for a new task each day are reasons I never want this to stop. It’s so beautiful guys, Thank you!
Today, we will be sharing our favourite Food/ Recipe. As they say, Food is life, isnt it? These days I’ve been eating so much and I don’t even know where the appetite is coming from.My housemate mentioned it yesterday but she can’t even complain because we are eating everything together. Lol. I have also been re trying all the things I learnt from Catering school and I’m glad to let you guys know that I’m still good at it. I also intend to try out new stuff as the weeks go by without a care in the world. Maybe when January comes, i might reduce it a bit to not lose my much loved flat tummy but for the rest of the year? Abeg who flat tummy epp? I am eating a lot!
My regular Go to food is Fried rice and chicken well dipped in stew. I can actually cook Fried rice while my eyes are closed and I think i have one of the fastest methods. Let me share though I might not do it in the professional way food bloggers do theirs by giving exact quantities and all (Maybe because I don’t abide by them,Lol).
All you need :
- Rice
- Vegetables :Carrot, Lentils, Sweet corn, Green Beans, Liver or Hot dog, Green pepper and any other vegetable you would love to add.
- Maggi
- Salt
- Vegetable Oil
- Chicken
- Pepper
- And of course, Water
Procedure
- Season your chicken with onions , maggi, curry , thyme , salt and add some water to get enough stock
- Fry the chicken.
- Use the heated vegetable oil to fry the already diced vegetables except the green beans (Lol I did not mention that you’d cut them but of course you would).
- Make your stew (whichever way you want it). Use some of the stock but leave enough for your fried rice.
- Put the stock in a pot, add more seasoning to taste with a little bit more curry vegetable oil, and some water(Be careful to not add too much water so as to not make it soggy)
- Allow it to mash together and heat well.
- Add your already washed rice.
- Allow to boil
- When the water is almost dried up, add your fried vegetables gradually and add the green beans last.
- Your fried rice is ready, really.

My appetite these days scares me too and I’m worried.
My best is fried rice and fried fish (I don’t mind any type of fish) and plantain please.
But I fried my vegetables in hot oil first before adding my parboiled rice and of course my green beans always come last as well.

My favorite dish has to be jollof rice and plantain. I love it so much. I’m not yet perfect as I’m still learning several to make that perfect smoky flavor jollof. I have some tips sha
1- Parboiling the rice to still make it grainy and not meshed
2- For rice turning into Asawo rice pardon me pls, I don’t know the English word lol, Reduce heat and cover with foil. Works every time

Sadly i have a very bad eating habit and I’ve been complaining too much about it of late especially cos of the constant ulcer pain I feel most nights. One thing about me though is that once i crave for a meal, I try to satisfy my craving. Amala with ewedu and gbegiri is my all time favorite food and I mean in that exact same manner. No don’t give me Amala and efo riro, that’s an insult to amala.
Ingredients
Elubo (yam/plantain flour)
Ewedu
Beans
Procedure
For the gbegiri( beans soup) you just boil your beans till it’s super soft, then you mash with ijabe(short broom exclusively for cooking) once you have a smooth consistency, you add palm oil, salt and your choice of seasoning to taste.
Ewedu has almost same procedure, after plucking and washing the leaf, steam In little water and when it’s soft enough use the ijabe again to mash up or the latest trend you can use a blender. Add up seasoning to taste.
And now the almighty Amala, I specifically prefer the plantain flour hmmmm cos it’s more nutritious, diabetic friendly( I don’t have o) and it’s more expensive than the regular yam flour”who dosent like expensive shi” so you boil water to boiling point, pour in the flour and stir till it forms a mould. Make sure to add more water and leave to cook well so you don’t just eat flour mixed with water
Serve with a cold bottle of Coca-Cola

I’m salivating for it all…. From Tolani’s fried rice, to jollof rice and plantain plus fried fish and amala with gbegiri, with tinu eran (assorted meat) I don’t care for ewedu that much. Cooking is so fun when all the ingredients are complete in a spacious kitchen.
P. S I don’t know what I will look forward to when this month ends… I wish it would continue, it’s good to be a part of a community. I’m glad I was part of this

Food time. My best food is vegetable soup and EBA.
For EBA all you need is
Garri
Bowl
Turning stick
Boiling what.
How I make my eba depend on the type of garri, for igbo garri— pour the Boiling water into the bowl and add garri, make sure there is a little water on top then cover is for some minute before turning, but for other garri you can turn it immediately.
For the vegetable soup. I do make two type (the yoruba eforiro and igbo vegetable soup). Same process but different vegetables and ingredient.
For eforiro ( I use just spinach leaf). Igbo vegetable soup ( uwgu , waterleaf and spinach without iru).
Process
Heat red oil
Add onions
Add pepper
(For eforiro add iru)
Allow to fry for sometime
Add your orishirisi (meat, pomo, stock fish, panla etc)
Add Maggi and salt
Allow to cook
Then add your vegetables.
Food is ready😋😋😋

I think I just learned how to cook fried rice in under 5 minutes, I will be trying this out real soon. Meanwhile my favorite food is beans, I know it sounds local but yea, I never waste a plate of beans! Lol

My favourite meal is Amala,ewedu,stew and them Orishirishi,I actually like my Amala with plenty ewedu and little stew.
Boil your meat,snails,ponmo and them other orishirishi ,boil your ground pepper and tomatoes,set aside.
Fry onions in oil(Palm oil is best for Amala stew),pour boiled pepper and tomatoes,add maggi salt,let it cook for a while,then add your meat and all,after some minutes,stew is ready.
Make ewedu by boiling water and kaun,add your ewedu leaves,then blend with the short cooking broom,I prefer blender these days though,add salt to taste,you have your ewedu.
I make my Amala last because I love it fresh and hot,not from the cooler.
Boil water till it’s at a strong boiling point,add your sieved yam flour and stir with your ladle till you get a fine and not too tough/soft texture,use your food Parker to scrape it together,add water,cover the pot and let it cook for like 5 minutes,then stir with the ladle again….Your Amala is ready.

I like your recipe, but not really i fried rice fan. I like it okay but i cant close my eyes and make it. Something i can make with closed eyes tho is amala and ewedu with stew. God!!! I dont know why i love this delicacy so much, maybe cos iv bin in ibadan ally life but its my go-to meal all day errday😁😉. I cant type how to make it but its quite simple.
Btw lets continue this in December.

I’m shocked it took Omotolani until the 20th day to come up with the topic of Food in a “HAPPINESS Challenge Series”. I’ll forgive you for the oversight.
I am so much of a Foodie, but I find it difficult to choose a favourite meal; I think it would be unfair to other foods. But if I must, I’ll say Beans (Jollof or Plain with fried stew) for many reasons.
While I was younger, I had a somewhat petit stature compared to my peers. I was encouraged to eat plenty of beans. I might be wrong, but I’m convinced it aided my growth. For this reason, I continue to appreciate and feel indebted to Beans.
Another obvious reason I love beans is in its accommodating nature. Beans is perhaps the most amiable of foods. It is comfortable around practically anything. Beans and Garri, Beans and Bread, Beans and Rice, Beans and Yam, Beans and Plantain; you name it.
Regrettably, I’m not the most efficient of chefs, but I pride myself a competent cook where Beans is the determining barometer.
But I won’t be revealing my magical procedure for cooking my deliciousdelicious Beans, it is a strongly guarded secret, lol.
Omotolani’s fried rice? I wish I could try it out myself, but I’d rather wait to eat from your pot dear.

Mtn seems to be on my case these days.
My all time fav is spaghetti and noodles cooked together with suya.
I had initially written a long detailed recipe but MTN happened.
Quick recipe –
Cook spaghetti and noodles till almost done in little groundnut oil and salt. Add Grinded pepper,seasoning from the noodles and suya.
Your yummy dish of spaghetti is ready.

fav food used to be Amala, but I think spaghetti and corned beef stew has taken over.
Boil spaghetti with little oil and salt, drain and put aside when soft.
Heat up vegetable oil, add onions and corned beff then fry for like a minute, add pepper and whatever seasoning(s) you like, cover up and allow to cool. Bam! 🍝

Foooood!! Finally!! You’d think a foodie eats so much but nah, that’s not me. I could go the whole day without eating and not feel hungry. I’ve visited a doctor because of this. Yes, it’s that bad. But stil, I love love love food. I mean, just the sight makes me so happy and forget all my worries.
My favourite food is fried rice! Good, rich fried rice. Not those they serve at parties o *side eyes* First, I parboil the rice and set it aside. Fry the vegetables, then add the rice. Mix all, add little water and finish cooking using little heat. Serve with chicken or turkey.
P.S. I think jollof rice is OVERRATED 😑😑

Jollof rice is actually overrated and I don’t stop saying this. White rice with well made stew over it anytime.
